R&D Insights: Multifunctional Seasonings

Seasonings are fundamentally blends intended to enhance the flavor of food. While some of Fuchs’ blends have very specific applications, many of our favorite seasonings here at Fuchs perform across a variety of applications. Here, we show you how one seasoning can be utilized in a variety of applications.

Seasoning Spotlight: Korean Spice Seasoning

This blend was initially designed to be a dry version of dumpling sauce you may find at your local Asian food restaurant. It is salty from soy sauce, savory from the garlic and onion, has a slight heat, and is aromatic with ginger at the forefront of its flavor. We started using this seasoning at 10% of the filling weight in dumplings. While initially paired with dumplings, we found this profile is overall very pleasant and ventured to guess it could be used in many other ways.

Snacks

Snacks were a natural fit for this blend. The blend itself is very balanced and would not overpower many snack bases. Keeping the Asian theme in mind, we developed a fried wonton chip that carried the seasoning beautifully. It quickly became a hit in the lab. In addition to wonton chips, this seasoning would also shine in many other snack applications, including popcorn, tortilla chips and savory trail mix.

Meats & Marinades

Meats and marinades were the next test for this blend. Teriyaki being a very popular flavor in jerky, this twist felt like a good option for jerky as well. The blend was mixed with just enough water to form a thick paste. We then cleaned and sliced brisket and let it sit in the marinade overnight. The next, day the beef was dehydrated for 8 hours for delicious results. Beyond jerky, this seasoning could be used in a variety of other meat applications – the possibilities are endless!
