Food Technologist Courtney Stokes describes soul food – and shares her famous mac & cheese recipe!

I grew up eating what we call soul food. The term “soul food” was first coined in the 1960s when “soul” was used to describe African American culture.

Traditionally prepared and eaten by African Americans, soul food is an ethnic cuisine that originated in the southern parts of the United States. This cuisine was developed out of the foods that were given to enslaved West Africans on southern plantations during the American Colonial period.

A traditional soul food dinner consists of fried chicken with macaroni cheese, collard greens, string beans, sweet potatoes, potato salad, and fried okra. At Fuchs North America, we can bring these dishes to life with our custom seasoning blends. Contact us to learn more.

Courtney’s Mac & Cheese Recipe

Ingredients

16 oz Elbow Noodles
16 oz Extra Sharp Shredded Cheddar Cheese
2 Cans Cheddar Soup
2 Cans Evaporated Milk
4-6 Tablespoons Butter
2 Eggs
Salt & Pepper to taste

Directions: Melt butter, set aside until cool. In mixer, mix cheddar soup, evaporated milk, cooled melted butter, and eggs until uniform. Add salt and pepper to taste. Once uniform, add 10 oz of sharp shredded cheddar cheese and mix until uniform. In a separate pot, boil the noodles and drain. Add noodles to the baking dish and pour the liquid mixture over the noodles and hand stir until evenly distributed. Sprinkle remaining shredded cheese over the mac and cheese and bake at 350F for 45 minutes uncovered. Remove and cool for a few minutes and serve.
