Signature Recipes from the Kitchen of Fuchs

 

 

Fiesta Fusion Seasoning

 

Ingredients: Salt, spices, dehydrated onion, sugar, dehydrated garlic and not more than 2% silicon dioxide and sunflower oil used as processing aids.

Pupusa – featuring Fiesta Fusion Seasoning

  1. Start by cooking 1lb of ground pork until browned. Season with Fiesta Fusion Seasoning at 3-4%.

  2. Put seasoned meat mixture in a bowl and let it sit in the fridge to fully cool while you make the masa mix.

  3. Masa: Add 2 cups of masa, 1.5 cups of warm water, and 1tsp of salt to a bowl and mix to form a ball. Cover the masa with a damp towel and allow it to rest for 30 minutes.

  4. When you are ready to make the pupusas, break off a golf ball-sized ball of dough and flatten it to a ¼” thick disc. Add 1TBSP of filling to the middle of the disc and top with shredded quesadilla cheese. Cover with a second disc and seal the edges. Form into a ball then flatten it out a second time to form a ½” thick disc.

  5. Cook on a comal or pan on medium-high heat until golden brown, flip, and cook the same way again

  6. Serve warm with pickled cabbage and enjoy!


Spicy Soy Seasoning

 

Ingredients: Sugar, tamari soy sauce (soybeans, salt, sugar), non-GMO maltodextrin, vinegar powder (maltodextrin, white distilled vinegar), onion powder, garlic powder, yeast extract, salt, cayenne pepper sauce (aged red cayenne peppers, salt, garlic, distilled vinegar), rice maltodextrin, citric acid, spices, natural flavors, and less than 2% silicon dioxide added as a processing aid.

Vegetable Momos – featuring Spicy Soy Seasoning

  1. Sautee minced onion, garlic, carrots, shiitake mushrooms, and leeks in a pan until they are translucent. Add 2 TBSP of Spicy Soy Seasoning and allow the filling to cool.
  2. Place 1tsp of cooled momo filling onto one 3” round dumpling skin.
  3. Shape the momo by holding the dough circle in your hand and pleating the edges, pinching them together at the top to seal the filling inside. (Alternatively, you can create a half-moon shape by folding the dough circle in half over the filling and pinching the edges together to seal the dumpling).
  4. Place ginger, lemongrass, and lime leaves in a pot filled with 2” of water. Place your bamboo steamer on top, place the momos inside, steam the momos for 7-9 minutes and serve while hot.

Roasted Butternut Spice

 

Ingredients: Spices, brown sugar, sugar, cocoa powder, salt, molasses, maltodextrin.

Butternut Squash Hand Pies – featuring Butternut Squash Spice

  1. Roast 1lb of butternut squash in the oven at 450°F for 35-45 minutes or until fully cooked and browned.
  2. Let the squash cool, then scrape the insides from the skin.
  3. In a large mixing bowl, add the squash, 12oz of softened cream cheese, and 2oz of Butternut Squash Spice. Mix well until everything is incorporated.
  4. Place the mixture in the fridge and allow it to chill for 1 hour.
  5. To assemble, cut 4” rounds from a ¼” thick pie dough. Fill the rounds with 2TBSP of filling, fold in half, and crimp the edges to seal. Brush the top of the hand pies with egg wash and bake at 450°F for 9-11 minutes or until golden brown.
